Where It All Began

A decision to build from the soil up.

Tom walked away from the corporate world with a clear conviction. That the way most food reaches people is fundamentally broken. Too many hands. Too many compromises. Too much distance between the animal and the person eating it.

He acquired a wine farm in Stellenbosch and started from the ground up. Not with a product in mind. With a principle. If you were going to do something, you did it properly. You took the time the process deserved. You built something that could stand behind every claim it made.

The early years were not about output. They were about observation. Restoring pasture health. Understanding what the land needed before asking anything from it. Learning, season by season, that shortcuts don't save time. They cost integrity.

The Herd

The cattle program took shape with the same philosophy that guided everything else. Tom was not selecting for maximum yield or fastest growth. He was selecting for temperament. For pasture performance. For animals that would thrive on grass alone and develop at the pace nature intended.

One thousand registered breeding females, structured across ten age group tiers. Built slowly. Built with intention. The herd is not a supplier. It is the foundation. The biological proof underneath every claim BULL makes.

These cattle live on open pasture. Natural grazing. No feedlots, no grain finishing, no shortcuts to speed up a process that was never meant to be rushed. They grow at the pace the land sets. Calm animals, handled with care, given the time and space to develop properly. That disposition carries through to the meat. Stress affects it. Confinement affects it. The way an animal spends its life shows up in what it produces at the end of it.

Yellow fat is not a flaw. It is a fingerprint. It means the animal lived on grass. Real grass. For long enough that the beta carotene from the pasture shows up in the fat itself.
